This is so easy, so fast, and SO good! I added minced garlic and used light coconut milk. It's very soupy, so you'll want rice to go with it (I suggest long grain brown rice).

Recipe: Whole wheat pasta with veggies
3/4 cup whole wheat pasta (I use penne or rotini)
1 cup low sodium chicken broth
1 cup frozen broccoli
82 g (roughly 3 cups) baby spinach
2 tsp minced garlic (I actually buy the jarred minced garlic packed in water)
Bring broth to a boil and add pasta and garlic. Reduce heat to medium- medium/high. After a few minutes add the broccoli. A few minutes later add the spinach. Stir regularly throughout. The broth will reduce to create a very light sauce. If it starts to get dry, add another 1/4 cup of broth. You want to make sure the pasta is cooked, so if you have to add broth, no biggie.
At the end you will have something absolutely delicious. It is very quick, and easy. There is no wrong way to do it (that's the kind of recipe I like!).

1 serving (3 cups/85 g) baby spinach
1 serving sliced deli turkey (I used Fit & Active, which is 5 slices), sliced or torn into strips/pieces
1 large flour tortilla
1 serving shredded cheese (I used Fit & Active Mexican blend, which is 1/4 cup)
Cooking spray
Spray a saute pan with cooking spray and turn stove to medium heat. Add spinach. Stir frequently to prevent burn. Allow spinach to completely wilt. Add turkey, and stir. Once turkey is heat through, pour into a tortilla, add cheese, and wrap up.
It is seriously delicious, takes about 5 minutes all told, and is pretty healthy to boot!

I decided to start a blog. You know, because it's not like being a mom to an energetic almost two year old and being a full time student are enough. With that in mind, we'll see how well I do with keeping up with the blog. My hope is to post at least weekly.
I began my weightloss journey in May or June. I bought a pair of running shoes and I started taking Lucy for walks in the morning. Then I got my old bike (that I bought in late elementary school or early middle school) from my parent's house and started taking Lucy for bike rides. We'd go about 5 miles each day. In July I starting doing Jillian Michael's 30 Day Shred. And I just completed my 6th week of the Couch to 5K program. A couple of weeks ago I began counting calories, which is actually easier than it seems.
Since the beginning I've also added a couple of other DVDs to my collection and have fallen in love with Jackie Warner's DVD. I just started doing that last week.
All told I've gone down a couple of clothing sizes, and over 20 pounds. I still have a lot of work ahead of me, but I am starting to see light at the end of the tunnel.
My purpose in creating this blog is to chronicle my journey and to add recipes that I can refer back to and share with others.
